Green Seasoning


So you have seen me post about green seasoning in some of my recipes. I finally got off my butt and decided to post a recipe for it. Now green seasoning is practically a staple in Trinidadian cooking. We use it in pretty much everything we cook. The salt and black pepper style of seasoning alone just does not suffice over here. Trinis love huge, in your face, bold flavours. We have a local saying, “that food has no taste.” if improperly seasoned. So here is the easy-peasy recipe so you too can enjoy cooking with flavours of the Caribbean.


3 cups chadon beni/culantro or cilantro if you can’t find culantro – washed and chopped
1 1/2 cups chives (green and white parts) – washed and chopped
1 head garlic – peeled
1/2 to 1 cup water
  • Add all ingredients to a blender.
  • Blend until finely chopped (as seen in the above pic)
  • Use as needed and store the rest in an airtight jar in your refrigerator.
